This South-Indian curry is light and fragrant with a mild kick coming from the mustard seeds and chilli. Its striking colour comes from the warming turmeric and there is a unique and distinctive flavour of fresh curry leaves. Filled with juicy king prawns and tomatoes it is light enough to enjoy at lunch or dinner any day of the week.
Serves 2. Best served with Basmati Rice and flatbreads.
